Main Curries:
Meat or Fish Curry: Commonly includes chicken, beef, pork, mutton, or fish. These curries are richly spiced and can be cooked in a variety of styles, often using coconut milk for a creamy texture.
Dhal Curry (Parippu): Lentil curry made with masoor dhal, cooked until soft with turmeric, then seasoned with a tempered mixture of mustard seeds, onions, curry leaves, and sometimes tomatoes.
Vegetable Curries:A variety of vegetable dishes are served, such as pumpkin curry, jackfruit curry, or beetroot curry. These are cooked with spices and often a touch of coconut milk, designed to complement the flavors of the main curry.
Sambols and Pickles:
Mallung (Greens):These are dry or lightly moistened greens, such as kale, cabbage, or gotukola, tossed with grated coconut, mustard seeds, and lime juice. They provide a fresh, crunchy contrast to the rich curries.
Papadam: Thin, crispy lentil crackers that are deep-fried and add a crunchy texture to the meal.
